- 250 g pork crackling (chicharrón)
- 6 green tomatoes (tomatillos)
- 2 jalapeño peppers (adjust the quantity according to the desired level of spiciness)
- 1 white onion, cut into pieces
- 2 cloves garlic
- A handful of fresh cilantro (coriander)
- Lime juice to taste
- Salt to taste


Instructions:
1. In a saucepan of boiling water, cook the green tomatoes (tomatillos) and jalapeño peppers until soft and change color. Remove from water and let cool.
2. In a food processor or blender, add the green tomatoes, jalapeño peppers, onion, garlic and cilantro. Process until you get a smooth sauce. If you prefer a thicker sauce, you can add less water when blending the ingredients.
Transfer the salsa verde to a bowl and season with salt and lime juice to taste. Mix the ingredients well and taste the sauce to adjust the level of spiciness and seasoning to your preference.
