
Tequila and Mezcal - The Original Mexican Spirits

Tequila is a protected category of spirits and is only produced in Mexico. Of the approx. 200 different types of Agave worldwide, 150 come from Mexico. But only one can be used for Tequila production! The Blue Agave.
Tequila is produced mostly around the city of Tequila in Jalisco, Mexico. Tequila producers are called "Jimadores". Harvesting is hard, manual labor. The Pina, the heart of the Agave, is cooked for up to 3 days in steam, then split and squeezed. Its juice is distilled 2-3 times in huge vats. High quality Tequilas, which are called 100% Agave, contain only that sirup of Agave to produce the alcohol. Some Tequilas are left to mature in oak barrels, to give them more flavor and special aroma.
Mezcal - a special Mexican spirit
Like Tequila, Mezcal is also a protected category. It is produced in seven Mexican states, mainly in Oaxaca. Approximately 28 types of Agave are used for its production. Espadín is the best known. The pina is cooked below ground, in holes covered with banana leaves. There it ferments for up to 5 days. It is chopped and in fermentation vats the sugar is converted with yeast to alcohol. For distillation, it is put in clay or copper pots and heated slowly over a fire.
The production of Mezcal has to be purely handmade, in the traditional way. In comparison, Tequila can also be produced industrially. Therefore, the production of Mezcal is much less than that of Tequila. For every 100 bottles of Tequila, there is only one bottle of Mezcal.
