The cactus leaves are boiled in salted water until soft, then strained and allowed to cool. Then they are mixed with the other ingredients and seasoned with lime, olive oil and salt. Here follows the recipe:

 

Ingredients:

- 4 cooked cactus leaves
- 1 small red onion, finely sliced
- 2 medium tomatoes, cut into small cubes
- 1 chile jalapeno or serrano, finely chopped (optional!)
- ½ cup fresh cilantro, chopped
- juice of 2 limes
- 2 tablespoons olive oil
- salt

 

Preparation:

1. cut cooked cactus leaves into fine strips or small cubes.
2. mix the cut cactus leaves in a bowl with the onion, tomatoes, chili and coriander
3. mix well lime juice with olive oil and salt
4. pour the dressing over the salad and stir gently and abundantly
5. season with lime or salt if necessary
6. cover the bowl and refrigerate for at least 30 minutes to allow the dressing to infuse.
7. serve the cactus salad cold either as a side dish or main course and garnish with some fresh cilantro
