Mexican Mole

Mole is one of the most iconic dishes of Mexican gastronomy, it is known for its complexity of flavors and its velvety texture. The name "mole" comes from the Nahuatl word "molli", which means "sauce" or "mixture".

The origins of mole date back to pre-Hispanic times, when the indigenous peoples of Mexico prepared sauces with chiles and aromatic herbs to accompany their food. With the arrival of the Spaniards, new ingredients were added to the recipe, such as chocolate and spices, which led to the creation of mole as we know it today.

The preparation of mole is a laborious process and requires several steps. First, the chiles are roasted and ground to create a paste. Then, it is mixed with other ingredients such as dried fruits, seeds and spices, and cooked with broth to create a smooth, thick sauce. Finally, it is served with chicken or turkey meat, rice and tortillas

Currently, there are said to be seven varieties of mole in Mexico, each with its own distinctive flavor and aroma. The most popular are mole poblano, which is made with chiles, spices and chocolate; mole negro from Oaxaca, which is made with chiles, spices and plantains; and mole amarillo, which is made with chiles, achiote and spices.

Each region of Mexico has its own version of mole, reflecting the richness of the country's gastronomic culture. The variety of ingredients and the complexity of mole preparation make it a special and unique dish. Its deep and complex flavor has conquered palates around the world and has made it one of the most recognized and appreciated dishes of Mexican cuisine.
